Meat Sauce:
- 1 tablespoon olive oil
- 1 medium onion (finely chopped)
- 2 carrots (peeled and diced)
- 2 celery stalks (diced)
- 3 garlic cloves (minced)
- 1 lb ground beef
- 1 lb ground pork
- 1 cup whole milk
- 1 cup dry white wine
- 1 can (28 oz) crushed tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ½ teaspoon black pepper
To Serve:
- 1 lb pasta (tagliatelle or spaghetti)
- Grated Parmesan cheese
- Chopped parsley
Instructions
- Prepare the Meat Sauce: In a large skillet or Dutch oven, heat olive oil and sauté onion, carrots, and celery until soft. Add garlic, ground beef, and pork, cook until browned. Stir in milk, wine, tomatoes, tomato paste, oregano, salt, and pepper. Simmer for 45–60 minutes.
- Cook the Pasta: Meanwhile, cook pasta according to package instructions. Drain and toss with the sauce.
- Serve: Top the pasta with grated Parmesan and fresh parsley before serving.
Notes
- For a richer flavor, simmer the sauce longer or add a Parmesan rind during cooking.
- This sauce freezes well and can be made ahead.
