Sausages:

  • 8 pork sausages

Vegetables:

  • 4 medium potatoes (peeled and cut into chunks)
  • 3 carrots (peeled and sliced)
  • 1 red onion (cut into wedges)
  • 1 cup green beans or peas

Seasoning:

  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • Salt and pepper to taste

Gravy:

  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 1/2 cups beef or chicken broth
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Prepare vegetables: Place potatoes, carrots, and red onion in a roasting pan. Drizzle with olive oil, sprinkle with thyme, garlic powder, salt, and pepper. Toss to coat.
  3. Add sausages: Nestle sausages on top of the vegetables. Roast for 25 minutes, then turn sausages and stir vegetables. Add green beans or peas and roast for another 15–20 minutes.
  4. Make gravy: Melt butter in a saucepan, stir in flour, then gradually whisk in broth and Worcestershire sauce. Simmer until thickened. Season with salt and pepper.
  5. Serve: Drizzle gravy over baked sausages and vegetables.
