  • 4 cups beef broth
  • 2 cups water
  • 12 ounces fettuccine or spaghetti
  • 1 tablespoon Worcestershire sauce
  • 1 cup shredded Gruyere cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Chopped fresh parsley for garnish


Instructions

  1. Caramelize the Onions: In a large pot or deep skillet, heat the butter and olive oil over medium heat. Add the sliced onions, salt, and pepper, cooking slowly while stirring often for about 20 to 25 minutes until the onions are deeply caramelized. Sprinkle the sugar over the onions to enhance caramelization.
  2. Add Garlic and Thyme: Stir in the minced garlic and thyme, cooking for another 1 minute until the garlic is fragrant.
  3. Add Liquids and Bring to Boil: Pour in the beef broth, water, and Worcestershire sauce. Increase the heat to bring the mixture to a boil.
  4. Cook the Pasta: Add the pasta to the boiling liquid, then reduce the heat to a simmer. Cook uncovered, stirring occasionally, for 12 to 15 minutes until the pasta is tender and most of the liquid has been absorbed.
  5. Melt the Cheese: Stir in the Gruyere, mozzarella, and Parmesan cheeses. Continue stirring until the cheeses have melted and the sauce is creamy.
