Ingredients
Scale
Chicken
- 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- Salt and pepper, to taste
- 2 tablespoons olive oil
Sauce and Pasta
- 4 tablespoons unsalted butter
- 6 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 8 oz wide egg noodles (uncooked)
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried parsley (or 1 tablespoon fresh)
Optional Garnish
- Chopped fresh parsley
- Extra Parmesan cheese
Instructions
- Season the chicken: Season the bite-sized chicken pieces evenly with salt and pepper to enhance their flavor before cooking.
- Brown the chicken: Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 4 to 5 minutes. Remove the chicken from the pan and set aside to keep warm.
- Sauté garlic in butter: In the same skillet, melt the unsalted butter over medium heat. Add the minced garlic and sauté for 30 to 60 seconds until fragrant, being careful not to burn the garlic.
- Add liquids: Stir in the chicken broth and heavy cream, combining them with the garlic butter mixture to form the sauce base.
- Cook the noodles: Add the uncooked wide egg noodles to the pan, pressing them down into the liquid. Cover the skillet and simmer for 8 to 10 minutes, stirring occasionally to prevent sticking, until the noodles are tender and have absorbed much of the sauce.
- Combine chicken and cheese: Return the browned chicken to the pan. Stir in the grated Parmesan cheese and dried parsley. Mix until the sauce is creamy and evenly coats the chicken and noodles.
- Let it thicken and serve: Remove the skillet from heat and let the dish sit for 2 to 3 minutes to thicken slightly. Garnish with chopped fresh parsley and extra Parmesan cheese if desired. Serve warm and enjoy this creamy, flavorful one-pan meal.
Notes
- You can substitute chicken thighs for breasts for juicier meat.
- Adjust the seasoning with more salt and pepper according to taste.
- Add steamed or sautéed vegetables like spinach or mushrooms for added nutrition.
- Use gluten-free egg noodles to make the dish gluten-free.
- For a lighter version, substitute heavy cream with half-and-half or a lower-fat cream alternative.
- Make sure to stir occasionally when cooking noodles to prevent sticking and to ensure even cooking.
