- 4 slices crusty bread
- 1 cup shredded Gruyère or sharp cheddar cheese
- 1 tablespoon butter
Instructions
- Soup: In a large pot, heat olive oil and butter. Caramelize onions, add garlic, mushrooms, thyme, then deglaze with wine. Add broth, soy sauce, simmer. Stir in cream, season.
- Cheesy Toasties: Butter bread, add cheese between slices. Cook in skillet until golden and cheese melts. Cut and serve with soup.
