Glaze:
- 4 ounces dark chocolate, chopped
- 1/2 cup heavy cream
- 1 teaspoon instant espresso powder
Instructions
- Prepare the Choux Pastry: Preheat oven to 400°F. In a saucepan, bring water, butter, and salt to a boil. Add flour, stir until a smooth ball forms. Remove from heat, cool, beat in eggs, and pipe onto baking sheet.
- Bake the Pastry: Bake at 400°F for 15 minutes, then reduce to 350°F for 20-25 minutes until golden. Cool.
- Make the Pastry Cream: Heat milk, cream, and espresso. Whisk yolks, sugar, flour, and salt. Combine mixtures, cook until thickened. Cool with plastic wrap.
- Prepare the Glaze: Heat cream, pour over chocolate and espresso. Whisk until smooth.
- Assemble the Éclairs: Pipe cream into shells, dip tops in glaze, and allow to set.
