Description

Chicken:

  • 4 boneless, skinless chicken thighs or breasts
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Additional Ingredients:

  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice (about 1 large lemon)
  • 1 (14-ounce) can artichoke hearts, drained and halved
  • 1/2 cup kalamata olives, pitted and halved
  • 1/4 cup chopped sun-dried tomatoes (optional)
  • Lemon slices and chopped fresh parsley for garnish

Instructions

  1. Season the Chicken: Season the chicken with oregano, salt, and pepper.
  2. Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Sear the chicken for 4–5 minutes on each side, or until golden and nearly cooked through. Remove chicken and set aside.
  3. Prepare the Sauce: In the same skillet, reduce heat to medium and sauté the garlic for 30 seconds until fragrant. Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan. Stir in the artichokes, olives, and sun-dried tomatoes if using.
  4. Simmer: Return the chicken to the skillet, nestling it into the sauce. Cover and simmer on low for 8–10 minutes, or until the chicken is fully cooked and tender.
  5. Garnish and Serve: Garnish with lemon slices and fresh parsley before serving.

  • Serve over couscous, rice, or orzo to soak up the flavorful sauce.
