- Preheat the oven: Preheat the oven to 410°F and line two baking sheets with parchment paper.
- Cream butter and sugars: In a large mixing bowl, cream the cold butter, brown sugar, and granulated sugar together until well combined but not overly smooth.
- Add eggs: Add the eggs one at a time, mixing just until incorporated.
- Combine dry ingredients: In a separate bowl, whisk together the all-purpose flour, cake flour, baking soda, and salt.
- Mix wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Add mix-ins: Fold in the chocolate chips and walnuts if using.
- Shape dough: Divide the dough into 8 large, rough balls, about 6 ounces each. Do not flatten them.
- Bake cookies: Place 4 cookies per baking sheet to allow space. Bake for 9–11 minutes until the edges are golden but the centers look slightly underbaked.
- Cool and serve: Let cool on the pan for 10–15 minutes before serving for the gooey center texture.
