  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter (divided)
  • 6 garlic cloves (minced)
  • juice and zest of 1 lemon
  • 1 teaspoon Italian seasoning
  • salt and black pepper to taste

For the Linguine:

  • 12 oz linguine pasta
  • 1 cup freshly grated Parmesan cheese
  • 1/2 cup heavy cream
  • 1/2 cup reserved pasta water
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Season the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning on both sides.
  2. Cook the Chicken: In a large skillet over medium heat, heat olive oil and 2 tablespoons butter. Add chicken breasts and cook for 6-7 minutes per side, or until golden and cooked through. Remove chicken and set aside.
  3. Prepare the Sauce: In the same skillet, add remaining butter and minced garlic. Sauté for 1-2 minutes until fragrant. Stir in lemon juice and zest, scraping up any browned bits.
  4. Cook the Linguine: Cook linguine according to package instructions. Reserve 1/2 cup pasta water before draining.
  5. Combine and Serve: In the skillet, stir in heavy cream and Parmesan cheese until smooth. Add pasta, reserved water, and toss until well coated. Slice chicken and serve over pasta. Garnish with parsley.
