  • 3/4 cup whole milk

  • 2 large eggs

  • 1 cup lemon curd (store-bought or homemade)
  • 1 tablespoon lemon zest

  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon milk (more if needed for thinning)


Instructions

  1. Prepare the Dough: In a large mixing bowl, combine 2 cups of the flour with the yeast, sugar, and salt. In a small saucepan, warm the milk and butter until the butter is melted and the mixture is warm but not hot. Add the warm milk mixture and eggs to the flour mixture and beat until smooth. Gradually add the remaining flour until a soft dough forms.
  2. Knead the Dough: Turn the dough onto a floured surface and knead for 5–7 minutes until it becomes smooth and elastic.
  3. First Rise: Place the kneaded dough in a greased bowl, cover it, and let it rise in a warm place for about 1 hour or until it has doubled in size.
  4. Shape the Rolls: After the dough has risen, punch it down and roll it into a 10×15-inch rectangle. Spread the lemon curd evenly over the dough, then sprinkle with lemon zest. Roll the dough tightly from the long side to form a log and slice it into 12 equal rolls.
  5. Second Rise: Arrange the rolls in a greased 9×13-inch baking dish, cover, and let them rise for another 30 minutes until puffed.
  6. Bake: Preheat the oven to 350°F (175°C). Bake the rolls for 22–25 minutes or until they turn golden brown on top.
  7. Make the Glaze: While the rolls cool slightly, whisk together powdered sugar, lemon juice, and milk to create a smooth glaze. Adjust the thickness by adding more milk if needed.
