Description

This vibrant Lemon Asparagus Pasta is a fresh and zesty dish perfect for a quick and elegant meal. Featuring al dente spaghetti tossed with tender asparagus, bright lemon zest, and juice, and finished with savory Parmesan cheese, it’s a delightful blend of simple ingredients that come together in just 25 minutes to create a light yet satisfying pasta dish.

Ingredients

Scale

Pasta and Vegetables

  • 250 grams (about 8.8 ounces) spaghetti
  • 200 grams (about 7 ounces) fresh asparagus, trimmed and cut into 2-inch pieces

Flavorings and Seasoning

  • Zest from 1 medium lemon
  • Juice from 1 medium lemon (about 2 tablespoons)
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste

Finishing

  • 50 grams (about 1/2 cup) Parmesan cheese, grated

Instructions

  1. Prepare the asparagus: Rinse the asparagus under cold water and trim off the tough ends. Cut the asparagus into 2-inch pieces to ensure even cooking.
  2. Cook the spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Before draining, reserve about 1 cup of the pasta cooking water for later use.
  3. Sauté garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until it becomes fragrant, being careful not to burn it.
  4. Toss pasta and asparagus: Add the drained spaghetti and the cooked asparagus pieces to the skillet. Gently toss everything together to combine and heat through.
  5. Add lemon and adjust consistency: Stir in the lemon zest and lemon juice. Gradually pour in the reserved pasta water a little at a time until the desired sauce consistency is achieved, creating a light, silky coating on the pasta.
  6. Serve: Plate the pasta in elegant nests and generously sprinkle with grated Parmesan cheese. For extra brightness, garnish with additional lemon zest if desired. Season with salt and black pepper to taste and serve immediately.

Notes

  • To blanch asparagus quickly, you can boil it for 2-3 minutes then shock in ice water to keep its vibrant color and tender-crisp texture.
  • If you prefer a creamier sauce, a tablespoon of pasta cooking water combined with Parmesan creates a natural, creamy coating without cream.
  • Adjust the amount of lemon juice depending on your taste preference for more or less acidity.
  • Use freshly grated Parmesan for the best flavor and texture.
  • This dish pairs wonderfully with a light white wine such as Sauvignon Blanc or Pinot Grigio.
