Description

These Lazy Roasted Vegetables are a simple, flavorful side dish perfect for any meal. A medley of colorful veggies roasted to perfection with herbs and olive oil.

Ingredients

Scale

Ingredients:

  • 3 cups mixed vegetables (such as carrots, broccoli, bell peppers, zucchini, and red onion)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven: Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare vegetables: Spread the chopped vegetables evenly on the sheet.
  3. Add seasonings: Drizzle with olive oil and sprinkle with garlic powder, thyme, oregano, salt, and pepper.
  4. Toss and roast: Toss everything together directly on the pan until the vegetables are evenly coated. Roast in the oven for 20–25 minutes, stirring halfway through, until the vegetables are tender and slightly caramelized.
  5. Serve: Serve warm.

Notes

  • Use any combination of vegetables you have on hand—this is a great clean-out-the-fridge recipe.
  • Add a pinch of red pepper flakes for heat, or a squeeze of lemon juice after roasting for brightness.
