- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
Instructions
- Preheat the oven: Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
- Prepare vegetables: Spread the chopped vegetables evenly on the sheet.
- Add seasonings: Drizzle with olive oil and sprinkle with garlic powder, thyme, oregano, salt, and pepper.
- Toss and roast: Toss everything together directly on the pan until the vegetables are evenly coated. Roast in the oven for 20–25 minutes, stirring halfway through, until the vegetables are tender and slightly caramelized.
