  • 1 lb ground beef or turkey
  • 1 medium onion, diced

  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 medium zucchini, diced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)

For Garnish:

  • Shredded cheddar cheese
  • Chopped cilantro

Instructions

  1. Brown the Meat: In a skillet over medium heat, brown the ground beef or turkey with the diced onion until meat is cooked through and onion is softened. Drain excess fat.
  2. Combine Ingredients: Transfer the meat mixture to the crock pot. Add garlic, broth, diced tomatoes, tomato sauce, kidney beans, black beans, corn, bell peppers, zucchini, chili powder, cumin, smoked paprika, oregano, salt, black pepper, and red pepper flakes if using. Stir to combine.
  3. Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. Serve: Serve hot, topped with shredded cheddar cheese and fresh cilantro.
