Scale
Cake
- 1 cup Canola or Olive Oil
- 3 large Eggs
- 1 1/3 cup Whole Milk
- 2 Tablespoons Fresh Lime Zest
- 1 Tablespoon Fresh Lime Juice
- 2 cups Sugar
- 2 cups Flour
- 1 teaspoon Baking Powder
- 1/2 teaspoon Baking Soda
- 1 teaspoon Salt
Frosting
- 1/2 cup Butter (softened)
- 8 ounce Cream Cheese (softened)
- 4 – 4 1/2 cups Powdered Sugar
- 1 Tablespoon Fresh Lime Juice
- 1/2 teaspoon Fresh Lime Zest
Garnish
- Fresh Limes (sliced for garnish)
Instructions
- Preheat Oven: Preheat your oven to 325 degrees Fahrenheit to ensure the perfect baking temperature for the cake layers.
- Mix Wet Ingredients: In a large mixing bowl, combine the oil, eggs, whole milk, fresh lime zest, and lime juice. Cream the mixture together for about 2 minutes to blend all flavors and create a smooth consistency.
- Combine Dry Ingredients: In a separate large bowl, add the sugar, flour, baking powder, baking soda, and salt. Stir these dry ingredients to mix evenly.
- Mix Batter: Gradually fold the dry ingredients into the wet lime mixture until just combined, being careful not to overmix to keep the batter light and airy.
- Prepare Pans and Bake: Spray two 9-inch or three 8-inch cake pans with nonstick cooking spray. Divide the batter evenly among the pans. Bake three 8-inch pans for 20-26 minutes or two 9-inch pans for 30-36 minutes. Bake until a toothpick inserted in the center comes out clean. Allow cakes to cool completely before frosting.
- Make Lime Cream Cheese Frosting: In a large bowl, cream together the softened butter and cream cheese for 4-5 minutes until light and fluffy, scraping the bowl sides as needed. Gradually mix in powdered sugar, lime juice, and lime zest until smoothly combined. Chill the frosting to set properly.
- Assemble the Cake: Remove the cooled cakes from the pans. Spread a generous layer of frosting on top of one cake layer, then place the second layer on top. Cover the entire cake with the remaining frosting evenly.
- Garnish and Serve: Decorate the finished cake with fresh lime slices for an attractive presentation and an extra burst of lime flavor.
Notes
- Ensure the cake layers are completely cooled before frosting to prevent the frosting from melting.
- Use fresh lime zest and juice for the best authentic lime flavor.
- If you prefer a less sweet frosting, adjust the powdered sugar quantity accordingly.
- Canola or olive oil can be used depending on your preference for flavor.
- For easier slicing, refrigerate the cake after frosting for at least 30 minutes.
