Description

Irish Fifteens are a delightful no-bake dessert from Northern Ireland, featuring a luscious combination of crushed digestive biscuits, chopped glacé cherries, mini marshmallows, and sweetened condensed milk, all rolled in desiccated coconut. This sweet treat is easy to make, requiring no baking, and yields a sticky, chewy texture perfect for festive occasions or everyday enjoyment.

Ingredients

Scale

Dry Ingredients

  • 15 digestive biscuits, crushed
  • 15 glacé cherries, chopped
  • 15 mini marshmallows, halved
  • 1 cup desiccated coconut, plus extra for rolling

Wet Ingredients

  • 1 cup sweetened condensed milk

Instructions

  1. Crush the biscuits: Place the digestive biscuits in a large bowl and crush them into small pieces using your hands or a rolling pin until they are evenly broken down but still retain some texture.
  2. Mix in cherries and marshmallows: Add the chopped glacé cherries and halved mini marshmallows to the crushed biscuits, stirring well to ensure they are evenly distributed through the mixture.
  3. Add condensed milk: Pour in the sweetened condensed milk gradually and stir thoroughly until the mixture becomes sticky and holds together in a cohesive mass.
  4. Prepare coconut base: Sprinkle a layer of desiccated coconut onto a sheet of parchment paper to prevent sticking and provide a coating for the log.
  5. Shape the log: Transfer the sticky mixture onto the coconut and mold it into a long cylindrical log shape using your hands. If the mixture is too sticky to handle, slightly dampen your hands with water.
  6. Coat with coconut: Roll the shaped log in the extra desiccated coconut until it is fully coated on all sides to give a beautiful finish and added texture.
  7. Chill the log: Wrap the coconut-coated log tightly in parchment paper or plastic wrap and refrigerate for at least one hour to allow it to firm up properly.
  8. Slice and serve: Once chilled and set, unwrap the log and slice it into rounds or squares, then serve as a sweet treat or dessert.

Notes

  • Add extra desiccated coconut into the mixture for more texture if desired.
  • Lightly wetting your hands when shaping the log helps manage the stickiness for easier handling.
  • These treats store well in the refrigerator for up to 5 days, maintaining freshness and firmness.
