Peach Chutney:

  • 4 cups peeled and chopped ripe peaches (about 6 medium)
  • 1 cup finely chopped onion
  • 1/2 cup golden raisins
  • 1/2 cup brown sugar
  • 1/2 cup apple cider vinegar
  • 1 tablespoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. In a medium saucepan over medium heat, combine the chopped peaches, onion, golden raisins, brown sugar, and apple cider vinegar.
  2. Stir in the grated ginger, minced garlic, cinnamon, cloves, salt, and red pepper flakes if using.
  3. Bring the mixture to a boil, then reduce heat to low and simmer uncovered for 45 to 55 minutes, stirring occasionally, until thickened and jam-like in consistency.
  4. Remove from heat and let cool completely.
  5. Transfer to a jar or airtight container and refrigerate. Use within 2 weeks for best flavor.
