Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
- Mix Wet Ingredients: In a large bowl, combine the mashed bananas, natural peanut butter (or almond butter), honey or maple syrup, and vanilla extract. Stir until the mixture is smooth and well combined.
- Add Dry Ingredients: Stir in the rolled oats, cinnamon, and salt until fully incorporated, forming a thick cookie dough.
- Incorporate Optional Add-ins: Fold in mini chocolate chips or raisins, and chopped nuts or seeds if using, to add texture and flavor variety.
- Shape Cookies: Use a spoon to scoop heaping tablespoons of the dough onto the prepared baking sheet. Flatten each scoop slightly with the back of the spoon or your fingers to form cookie shapes.
