- 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, chopped

- 1/4 tsp chili powder
- Salt and pepper to taste
- 2 tbsp olive oil
- 2 tbsp chopped fresh parsley (optional)

Instructions
- Cook Sweet Potatoes: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add diced sweet potatoes and cook for 8–10 minutes, stirring occasionally, until they are tender and lightly browned. Remove the sweet potatoes from the skillet and set aside.
- Sauté Aromatics: In the same skillet, add the remaining tablespoon of olive oil and sauté the diced onion for 2–3 minutes until softened. Then add the minced garlic and chopped red bell pepper, cooking for an additional 2 minutes until fragrant and slightly softened.
- Cook Ground Turkey: Add the ground turkey to the skillet, breaking it up with a spoon. Cook it until it is browned and fully cooked through, about 6–8 minutes.
- Season and Combine: Stir in the smoked paprika, ground cumin, chili powder, salt, and pepper to the cooked turkey mixture. Return the cooked sweet potatoes to the skillet and stir everything together thoroughly. Cook for another 2–3 minutes to let the flavors combine.
- Garnish and Serve: Remove from heat, garnish with fresh chopped parsley if desired, and serve warm. Top with optional avocado slices, shredded cheese, or a fried egg for added flavor and nutrition.
