Instructions
- Preheat Oven: Preheat your oven to 325°F (160°C) to prepare for baking the mini cheesecakes evenly.
- Beat Cream Cheese: In a mixing bowl, beat the cream cheese until it becomes smooth and creamy, ensuring no lumps remain for a perfect texture.
- Add Sugar and Vanilla: Mix in the sugar and vanilla extract thoroughly to blend sweetness and flavor into the cream cheese base.
- Incorporate Sour Cream and Eggs: Add the sour cream and eggs to the mixture and stir until fully combined, creating a rich and smooth batter.
- Color the Batter: Add green food coloring incrementally until you achieve the vibrant Grinch green hue desired for a festive look.
- Prepare Muffin Tin: Line a muffin tin with cupcake liners and evenly fill each liner with graham cracker crumbs to form the crust base.
- Fill with Cheesecake Mixture: Pour the green cheesecake batter over the graham cracker crusts in each muffin liner.
- Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the cheesecakes are set around the edges but slightly jiggly in the center.
- Cool and Chill: Allow the cheesecakes to cool to room temperature, then refrigerate for at least 2 hours to fully set and develop flavor.
- Decorate and Serve: Just before serving, top each mini cheesecake with a red candy heart to complete the festive Grinch look.
Notes
- If you prefer a stronger green color, add food coloring a few drops at a time until the desired vibrancy is reached.
- Use full-fat cream cheese and sour cream for the creamiest texture.
- Refrigerating the cheesecakes overnight will improve flavor and texture even more.
- Make sure not to overbake the cheesecakes to keep them creamy and avoid cracking.
