These Grilled Baked Potatoes are a fantastic side dish for any BBQ or summer gathering. Crispy on the outside and fluffy on the inside, they are easy to make and customizable with your favorite toppings.

Potatoes:
- 4 large russet potatoes, scrubbed clean
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika (optional)
Toppings:
- sour cream
- shredded cheese
- chopped green onions
- crumbled bacon (optional)
Instructions
- Preheat the Grill: Preheat the grill to medium-high heat (around 400°F).
- Prepare Potatoes: Pierce each potato several times with a fork. Rub each potato with olive oil, then sprinkle evenly with salt, pepper, garlic powder, and smoked paprika if using.
- Wrap Potatoes: Wrap each potato tightly in aluminum foil.
- Grill Potatoes: Place the wrapped potatoes directly on the grill grates. Close the lid and grill for 45–60 minutes, turning occasionally, until the potatoes are fork-tender.
- Rest and Serve: Carefully remove from the grill and let rest for a few minutes before unwrapping. Slice open, fluff the insides with a fork, and add your favorite toppings. Serve hot.
Notes
- For a crispier skin, unwrap the potatoes during the last 5 minutes of grilling.
- You can also partially cook the potatoes in the microwave first to reduce grill time.
