Description

These Grilled Baked Potatoes are a fantastic side dish for any BBQ or summer gathering. Crispy on the outside and fluffy on the inside, they are easy to make and customizable with your favorite toppings.


Ingredients

Potatoes:

  • 4 large russet potatoes, scrubbed clean
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika (optional)

Toppings:

  • sour cream
  • shredded cheese
  • chopped green onions
  • crumbled bacon (optional)

Instructions

  1. Preheat the Grill: Preheat the grill to medium-high heat (around 400°F).
  2. Prepare Potatoes: Pierce each potato several times with a fork. Rub each potato with olive oil, then sprinkle evenly with salt, pepper, garlic powder, and smoked paprika if using.
  3. Wrap Potatoes: Wrap each potato tightly in aluminum foil.
  4. Grill Potatoes: Place the wrapped potatoes directly on the grill grates. Close the lid and grill for 45–60 minutes, turning occasionally, until the potatoes are fork-tender.
  5. Rest and Serve: Carefully remove from the grill and let rest for a few minutes before unwrapping. Slice open, fluff the insides with a fork, and add your favorite toppings. Serve hot.

Notes

  • For a crispier skin, unwrap the potatoes during the last 5 minutes of grilling.
  • You can also partially cook the potatoes in the microwave first to reduce grill time.
