Description

These Greek Chicken Gyros are a delicious Mediterranean-inspired meal featuring grilled marinated chicken, fresh vegetables, creamy tzatziki sauce, and crumbled feta cheese, all wrapped in warm pita bread.

For the Chicken:

  • 1 1/2 pounds boneless skinless chicken thighs
  • 3 tablespoons olive oil
  • 3 tablespoons plain Greek yogurt
  • 3 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 2 teaspoons red wine vinegar
  • 1 tablespoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For Serving:

  • 4–6 pita breads
  • 1 cup shredded lettuce
  • 1 cup sliced cucumber
  • 1 cup diced tomato
  • 1/2 small red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1 cup tzatziki sauce

Instructions

  1. Marinate the Chicken: In a large bowl, whisk together olive oil, Greek yogurt, garlic, lemon juice, vinegar, oregano, cumin, paprika, salt, and pepper. Add the chicken thighs and coat well. Marinate in the refrigerator for at least 1 hour or overnight.
  2. Grill the Chicken: Preheat grill or skillet over medium-high heat. Cook the chicken for 5–6 minutes per side until fully cooked and lightly charred. Rest, then slice into strips.
  3. Assemble the Gyros: Warm the pita bread. Spread tzatziki onto each pita, then top with lettuce, cucumber, tomato, onion, chicken, and feta. Fold or wrap and serve.

  • You can substitute chicken breasts for thighs if preferred.
