  • 2 tablespoons olive oil

Rice:

  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • ¼ cup fresh lemon juice (about 1–2 lemons)
  • 1 tablespoon lemon zest
  • 2 tablespoons chopped fresh parsley
  • Optional: lemon slices for garnish

Instructions

  1. Preheat oven: Preheat the oven to 375°F (190°C).
  2. Season chicken: Season chicken thighs with salt, pepper, oregano, and garlic powder.
  3. Sear chicken: In a skillet, sear chicken thighs until golden brown. Remove and set aside.
  4. Sauté aromatics: In the same skillet, sauté onion and garlic. Add rice and cook briefly.
