Chicken:
- 4 boneless, skinless chicken breasts
- ½ cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
Parmesan Mushroom Sauce:
- 1 tablespoon butter
- 8 oz mushrooms (sliced)
- 2 cloves garlic (minced)
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- ½ teaspoon dried thyme
- Salt and black pepper to taste
Instructions
- Pound the chicken breasts: Pound the chicken breasts to an even thickness and pat dry.
- Prepare the chicken: In a shallow dish, mix the flour, garlic powder, paprika, salt, and pepper. Dredge each chicken breast in the flour mixture, shaking off excess.
- Cook the chicken: Heat olive oil and butter in a large skillet over medium heat. Add the chicken and cook for 5–6 minutes per side, or until golden and cooked through. Transfer to a plate and keep warm.
- Make the sauce: In the same skillet, melt 1 tablespoon butter. Add mushrooms and sauté for 5–6 minutes until browned and tender. Stir in garlic and cook for another 30 seconds. Pour in the heavy cream and stir in Parmesan and thyme. Simmer gently for 2–3 minutes until thickened. Season with salt and pepper to taste.
- Combine chicken and sauce: Return the chicken to the skillet and spoon sauce over the top. Simmer for 2 more minutes.
- Serve: Serve warm with mashed potatoes, pasta, or rice.

- You can use chicken thighs instead of breasts.
- Add a splash of white wine to the sauce for extra depth.
