Ingredients
Scale
Main Ingredients
- 500 grams Gnocchi
- 150 grams Pancetta, diced
- 2 large Eggs
- 100 grams Parmesan cheese, grated
- 2 cloves Garlic, minced
- Freshly ground Black pepper, to taste
- Salt, to taste
- 1 tablespoon Olive oil (optional)
- A handful Fresh parsley, chopped (optional)
Optional Substitutes and Add-ins
- Guanciale as a substitute for pancetta
- Vegetables such as peas or spinach
Instructions
- Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, which usually takes 2-3 minutes. Drain the gnocchi, reserving some of the cooking water for later use.
- Cook the Pancetta and Garlic: Heat a large skillet over medium heat and add the diced pancetta. Cook until the pancetta is crispy, approximately 5-7 minutes. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant but not browned.
- Combine Gnocchi and Pancetta: Add the cooked gnocchi to the skillet with the pancetta and garlic. Toss well to combine and remove the skillet from heat to prevent the eggs from scrambling in the next step.
- Prepare the Carbonara Sauce: In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and freshly ground black pepper until smooth and creamy.
- Finish the Dish: Quickly pour the egg and cheese mixture over the hot gnocchi in the skillet, tossing thoroughly to coat the gnocchi evenly and create a creamy sauce. If the sauce seems too thick, gradually add some reserved pasta water to loosen it to your desired consistency.
- Serve: Plate the gnocchi carbonara and garnish with extra Parmesan cheese and chopped fresh parsley if desired. Serve immediately while warm.
Notes
- Use guanciale instead of pancetta for a more authentic Roman flavor.
- Be careful not to scramble the eggs; remove the skillet from heat before adding the egg mixture.
- Reserve some pasta water to help adjust sauce consistency for a silky texture.
- Optional vegetables like peas or spinach can be added for extra color and nutrition.
- Use freshly grated Parmesan for the best flavor and creaminess.
