Ingredients
Scale
Peach Filling
- 4 cups fresh peaches, peeled and sliced (or 2 cans of peaches in light syrup, drained)
- 1/4 cup granulated sugar (or coconut sugar)
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon cornstarch (optional, for thickening)
Biscuit Topping
- 1 cup gluten-free all-purpose flour (make sure it contains xanthan gum)
- 1/4 cup coconut sugar (or regular sugar)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup cold unsalted butter, cubed
- 1/4 cup unsweetened almond milk (or any milk of choice)
- 1/2 teaspoon vanilla extract
Instructions
- Preheat and prepare dish: Preheat the oven to 375°F (190°C) and grease an 8×8-inch baking dish or a similar-sized casserole dish with butter or cooking spray to prevent sticking.
- Prepare peach filling: In a medium bowl, combine the peeled and sliced peaches with sugar, lemon juice, cinnamon, nutmeg, and cornstarch if using. Toss well to coat the peaches evenly, then pour this mixture into the prepared baking dish.
- Mix dry ingredients for topping: In another bowl, whisk together gluten-free flour, coconut sugar, baking powder, and salt until well combined.
- Incorporate butter: Add the cold cubed butter to the flour mixture. Using a pastry cutter or your fingers, blend the butter into the flour until the mixture resembles coarse crumbs, which helps create a crumbly topping texture.
- Add wet ingredients to topping: Stir in almond milk and vanilla extract into the crumb mixture until just combined. The dough will be thick but spoonable.
- Assemble cobbler: Drop spoonfuls of the biscuit topping evenly over the peach filling in the baking dish. Leave some peach filling visible to allow for bubbling and even cooking.
- Bake: Place the baking dish in the oven and bake for 30-35 minutes, or until the biscuit topping turns golden brown and the peach filling is bubbling, indicating it is fully cooked.
- Cool and serve: Let the cobbler cool slightly before serving to allow the filling to set. Optionally, serve warm with vanilla ice cream or whipped cream for extra richness.
Notes
- If fresh peaches are not available, canned peaches in light syrup can be substituted but should be drained well.
- Cornstarch is optional but recommended to thicken the filling and prevent it from being too runny.
- Ensure the gluten-free flour blend includes xanthan gum to help provide structure to the biscuit topping.
- Butter should be cold to achieve the crumbly texture of the topping.
- You can substitute almond milk with any other milk or milk alternative according to your preference.
- Serve warm with vanilla ice cream or whipped cream for an indulgent dessert experience.
