Ingredients

Scale

Baguette and Topping

  • 10-12 pieces Baguette slices (about ½” thick)
  • 6 tbsp Olive oil (divided)
  • 1 tsp Garlic powder

Avocado Spread

  • 1 fruit Avocado (ripe, mashed)
  • ½ lime Lime juice (juice of)
  • ¼ tsp Salt
  • ¼ tsp Black pepper

Shrimp Mixture

  • 12 pieces Large shrimp (peeled and deveined)
  • 2 cloves Garlic cloves (cut into slivers)
  • ¾ tsp Smoked paprika
  • ½ tsp Cumin
  • ¼ tsp Salt
  • ¼ tsp Black pepper

Instructions

  1. Preheat and Prepare Baguette: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Slice the baguette into 10-12 pieces, each about ½ inch thick, and arrange them on the prepared baking sheet.
  2. Season and Bake Crostini: In a small bowl, mix 3 tablespoons of olive oil with 1 teaspoon of garlic powder. Brush this mixture generously on both sides of each baguette slice. Bake for 10-15 minutes until the crostini are golden and crispy.
  3. Make Avocado Spread: While the crostini bakes, mash the ripe avocado in a bowl. Add the juice of half a lime, ¼ teaspoon salt, and ¼ teaspoon black pepper. Mix thoroughly and let the flavors blend while the crostini finish baking.
  4. Sauté Garlic and Shrimp: Heat the remaining 3 tablespoons of olive oil in a skillet over low heat. Add the garlic slivers and cook for about 2 minutes until fragrant. Increase the heat to medium-high and add the shrimp. Season with smoked paprika, cumin, ¼ teaspoon salt, and ¼ teaspoon black pepper. Cook the shrimp for 3-5 minutes until they turn pink and opaque.
  5. Assemble Crostini: Spread a generous layer of the avocado mixture on each baked crostini. Top each slice with one cooked shrimp, arranging them attractively for serving.
  6. Serve: Serve the garlic shrimp crostini immediately to enjoy the delightful combination of creamy avocado, crispy bread, and flavorful shrimp.

Notes

  • Use ripe avocado for the creamiest spread.
  • For extra heat, add a pinch of chili flakes to the shrimp seasoning.
  • Baguette slices can be toasted under a broiler if you prefer quicker toasting.
  • Make sure not to overcook shrimp to keep them tender and juicy.
  • Leftover avocado spread can be refrigerated but may brown slightly; add lime juice to help prevent discoloration.
