Description

This Garlic Parmesan Chicken and Potatoes recipe is a delightful one-pan meal that combines tender chicken with flavorful potatoes, all coated in a savory Parmesan cheese and garlic blend. Easy to prepare and perfect for a cozy family dinner.

Ingredients

Scale

For the Chicken and Potatoes:

  • 1 ½ pounds boneless, skinless chicken thighs or breasts, cut into large chunks
  • 1 ½ pounds baby potatoes, halved or quartered
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • ¾ cup grated Parmesan cheese, divided
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the Oven: Preheat oven to 400°F (200°C).
  2. Prepare the Chicken and Potatoes: In a large mixing bowl, toss the chicken and potatoes with olive oil, garlic, Italian seasoning, paprika, salt, pepper, and ½ cup of the Parmesan cheese until evenly coated.
  3. Bake: Spread the mixture in a single layer on a greased or parchment-lined baking sheet or in a large baking dish. Bake for 35–40 minutes, stirring halfway through, until the chicken is cooked through and the potatoes are tender and golden.
  4. Final Touches: In the last 5 minutes of baking, sprinkle the remaining Parmesan cheese over the top and return to the oven. Once golden and bubbling, remove and garnish with chopped parsley. Serve hot.

Notes

  • For extra crispiness, broil for the last 2–3 minutes of cooking.
  • This dish pairs well with a side salad or steamed green beans.
  • You can also substitute sweet potatoes for a slightly sweeter twist.
