For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 3 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried parsley
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Vegetables:

  • 2 medium sweet potatoes (peeled and diced)
  • 1 bunch asparagus (trimmed)
  • Optional: grated Parmesan and lemon zest for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 425°F (220°C).
  2. Prepare the Herb Mixture: In a small bowl, whisk together olive oil, lemon juice, garlic, thyme, rosemary, parsley, paprika, salt, and pepper.
  3. Marinate the Chicken: Place the chicken breasts in a large bowl or zip-top bag and pour half of the herb mixture over them. Let marinate for 10–15 minutes.
  4. Roast the Vegetables: On a large baking sheet, toss the diced sweet potatoes with a drizzle of olive oil and a spoonful of the remaining herb mixture. Roast for 15 minutes.
  5. Add Chicken and Asparagus: Remove the tray from the oven, add the marinated chicken and asparagus to the pan, and brush everything with the remaining herb mixture.
  6. Finish Roasting: Return to the oven and roast for 20–25 minutes, or until the chicken reaches 165°F (74°C) and the vegetables are tender.
  7. Serve: Optional: sprinkle with Parmesan and lemon zest before serving.

Notes

  • You can substitute chicken thighs for chicken breasts if preferred.
  • For even cooking, cut sweet potatoes into uniform pieces and don’t overcrowd the pan.
