For the Creamy Mash:

  • 2 pounds russet potatoes (peeled and chopped)
  • 4 tablespoons unsalted butter
  • 1/2 cup whole milk
  • 1/4 cup sour cream
  • Salt and pepper to taste

Instructions

  1. Prepare the Creamy Mash: Boil peeled and chopped potatoes in salted water until fork-tender. Drain and return to the pot. Add butter, milk, sour cream, salt, and pepper. Mash until smooth and creamy. Cover to keep warm.
  2. Cook the Steak: Pat the meat dry and season both sides with salt and pepper. Sear in a hot skillet, add butter and smashed garlic in the last few minutes. Baste the steaks with the garlic butter. Rest the steaks before slicing.
