Description

This Galaxy Ripple Ice Cream Cake is a decadent no-bake dessert combining the creamy textures of chocolate and vanilla ice cream with crunchy Galaxy Ripple chocolate and a cookie crust. Perfect for summer or any occasion, it layers a buttery chocolate cookie base with chocolate ice cream infused with chocolate bar pieces, topped with vanilla ice cream and drizzled chocolate syrup. Ice Cream Layers

  • 1 package (150g) Galaxy Ripple chocolate bars, chopped
  • 1.5 quarts chocolate ice cream, softened slightly
  • 1.5 quarts vanilla ice cream, softened slightly

Topping

  • 1/2 cup chocolate syrup
  • Whipped cream for topping (optional)
  • Additional Galaxy Ripple pieces for garnish


Instructions

  1. Prepare the Pan: Line a 9-inch springform pan with parchment paper to ensure easy removal of the ice cream cake later.
  2. Make the Crust: In a bowl, combine the crushed chocolate sandwich cookies with the melted butter and mix thoroughly until combined. Press this mixture firmly and evenly into the bottom of the prepared pan to form the crust. Place it in the freezer for about 10 minutes to set firmly.
  3. Add Chocolate Ice Cream Layer: Spread the softened chocolate ice cream evenly over the chilled crust. Sprinkle half of the chopped Galaxy Ripple chocolate pieces over this layer. Return the pan to the freezer for 15 minutes to let the ice cream firm up.
  4. Add Vanilla Ice Cream Layer: After the chocolate layer is set, spread the softened vanilla ice cream evenly on top, smoothing the surface carefully. Drizzle the chocolate syrup evenly over the vanilla ice cream.
  5. Final Topping: Sprinkle the remaining chopped Galaxy Ripple pieces onto the chocolate syrup layer. Place the entire cake back into the freezer for at least 4 hours or overnight to freeze solid.
  6. Serve: Before serving, allow the ice cream cake to sit at room temperature for 10 minutes so it softens slightly for easier slicing. Remove the sides of the springform pan, garnish with whipped cream and additional chocolate pieces if desired, then slice and serve.
