- 1/3 cup melted coconut oil or butter
- 1/2 cup unsweetened cocoa powder
- 2/3 cup granulated sugar or coconut sugar

- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup mini chocolate chips (plus more for topping if desired)
Instructions
- Preheat and Prepare: Preheat the oven to 350°F (175°C) and grease a mini muffin tin or line with paper liners.
- Blend Ingredients: In a food processor, blend black beans, eggs, melted coconut oil, cocoa powder, sugar, vanilla, baking powder, and salt until smooth.
- Add Chocolate Chips: Fold in mini chocolate chips.
- Fill the Tin: Spoon batter into the muffin tin, top with extra chocolate chips, and bake for 12–15 minutes.
- Cool and Serve: Cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
