This French Onion Meatloaf combines the classic flavors of French onion soup with a hearty ground beef meatloaf, topped with caramelized onions and crispy French-fried onions for a delicious twist on a traditional favorite.

Meatloaf:
- 2 pounds ground beef
- 1 packet (1 oz) dry French onion soup mix
- 1 cup plain breadcrumbs
- 2 large eggs
- ½ cup milk
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup shredded mozzarella cheese
Topping:
- 1 cup French-fried onions (crushed)
- ¼ cup chopped fresh parsley (optional)
- 1 tablespoon olive oil
- 1 large yellow onion (thinly sliced)
- 2 tablespoons beef broth
Instructions
- Preheat oven: Preheat oven to 375°F and grease a loaf pan.
- Caramelize onions: Sauté sliced onions in olive oil until caramelized, adding beef broth to deglaze. Cool slightly.
- Prepare meatloaf: In a bowl, mix ground beef, soup mix, breadcrumbs, eggs, milk, Worcestershire sauce, seasonings. Gently fold in cheese and half of caramelized onions. Press into loaf pan.
- Bake: Bake for 45–50 minutes. Top with remaining onions and crushed French-fried onions. Bake additional 10–15 minutes until internal temp reaches 160°F. Rest before slicing. Garnish with parsley if desired.
