Description

This French Onion Meatloaf combines the classic flavors of French onion soup with a hearty ground beef meatloaf, topped with caramelized onions and crispy French-fried onions for a delicious twist on a traditional favorite.

Meatloaf:

  • 2 pounds ground beef
  • 1 packet (1 oz) dry French onion soup mix
  • 1 cup plain breadcrumbs
  • 2 large eggs
  • ½ cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded mozzarella cheese

Topping:

  • 1 cup French-fried onions (crushed)
  • ¼ cup chopped fresh parsley (optional)
  • 1 tablespoon olive oil
  • 1 large yellow onion (thinly sliced)
  • 2 tablespoons beef broth

Instructions

  1. Preheat oven: Preheat oven to 375°F and grease a loaf pan.
  2. Caramelize onions: Sauté sliced onions in olive oil until caramelized, adding beef broth to deglaze. Cool slightly.
  3. Prepare meatloaf: In a bowl, mix ground beef, soup mix, breadcrumbs, eggs, milk, Worcestershire sauce, seasonings. Gently fold in cheese and half of caramelized onions. Press into loaf pan.
  4. Bake: Bake for 45–50 minutes. Top with remaining onions and crushed French-fried onions. Bake additional 10–15 minutes until internal temp reaches 160°F. Rest before slicing. Garnish with parsley if desired.
