Lobster Bisque:
- 2 whole lobsters (about 1.5 lb each)
- 1/4 cup unsalted butter
- 1/2 cup brandy
- 1 cup dry white wine
- 1 large onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 tablespoon tomato paste
- 4 cups lobster or seafood stock
- 1 teaspoon saffron threads infused in 2 tablespoons warm water
- 2 cups heavy cream
- 1/4 teaspoon white pepper
- 1 teaspoon salt
Garnish:
- Fresh chives for garnish
Instructions
- Cook Lobsters: Boil salted water, add lobsters, and cook until shells turn red. Remove meat and set aside. Reserve shells.
- Prepare Bisque: Sauté lobster shells, onion, carrots, celery, and garlic. Deglaze with brandy and wine. Add tomato paste and stock. Simmer, strain, return liquid to pot, add saffron infusion and cream. Simmer gently.
- Finish and Serve: Season bisque, add lobster meat, and heat through. Ladle into bowls, garnish with chives, and serve.
Notes
- For enhanced flavor, roast lobster shells before adding them to the pot. Serve with crusty bread for dipping.
