Description

This Easy Shrimp and Rice Skillet is a delicious one-pan meal that’s perfect for a quick weeknight dinner. Succulent shrimp, flavorful bell peppers, and aromatic herbs come together with fluffy rice for a satisfying and flavorful dish.


Ingredients

Shrimp:

  • 1 pound large shrimp, peeled and deveined

Skillet:

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 cup long grain white rice
  • 2 cups low-sodium chicken broth
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Juice of 1/2 lemon
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat olive oil: In a large skillet over medium heat, add olive oil.
  2. Sauté onion: Add chopped onion, sauté for 2-3 minutes until softened.
  3. Add garlic and peppers: Stir in garlic and red bell pepper, cook for another 2 minutes.
  4. Toast rice: Add rice, stir for 1 minute.
  5. Add broth and seasonings: Pour in chicken broth, season with paprika, oregano, red pepper flakes, salt, and pepper.
  6. Cook rice: Simmer, cover, reduce heat, cook for 15-18 minutes until rice is tender.
  7. Add shrimp: Nestle shrimp on top of rice, cover, cook for 5-6 minutes until pink.
  8. Finish and serve: Squeeze lemon juice over the top, sprinkle with parsley before serving.

Notes

  • You can substitute brown rice, adjusting cooking time and liquid accordingly.
  • For extra flavor, use shrimp with tails on.
