Ingredients
Scale
For the Salmon and Veggies
- 1 lb salmon filet
- 2 cups baby potatoes
- 2 cups green beans
For the Lemon Sauce and Seasoning
- 2 tablespoons olive oil
- 1 tablespoon lemon juice (juice of one lemon)
- 1/2 tablespoon honey
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried dill
- 1/2 teaspoon ground ginger
- 1/2 teaspoon dried parsley
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Preheat and Prep. Preheat your oven to 425°F (220°C). Cut the baby potatoes in half for even cooking, then microwave them for 2-3 minutes until they are fork-tender to reduce total bake time.
- Make Sauce. In a small bowl, combine the olive oil, fresh lemon juice, honey, garlic powder, dried dill, ground ginger, dried parsley, paprika, salt, and pepper. Mix well to create a flavorful lemon-spice marinade.
- Assemble. Line a baking sheet with aluminum foil for easy cleanup. Place the salmon filet in the center of the baking sheet, then arrange the microwaved baby potatoes and green beans around it.
- Drizzle and Bake. Pour the lemon-spice mixture evenly over the salmon, potatoes, and green beans. Gently toss the vegetables to coat them thoroughly. Place the baking sheet in the oven and bake for 15 minutes at 425°F.
- Broil and Serve. After baking, switch your oven to broil mode and broil the salmon for 3-5 minutes until it turns lightly browned and develops a slightly crispy top. Remove from oven and serve immediately for a warm, healthy meal.
Notes
- Microwaving the potatoes before baking speeds up the cooking process and ensures they become tender.
- Broiling at the end adds a nice golden crust and texture to the salmon.
- You can substitute the green beans with asparagus or broccoli if preferred.
- Feel free to adjust the spices and herbs to your taste preferences.
- Use fresh lemon juice for the best flavor impact.
