Description

This Easy Crockpot Dinner is a simple and delicious one-pot meal that is perfect for busy weeknights. Tender chicken, flavorful vegetables, and aromatic herbs come together effortlessly in the slow cooker for a satisfying dish the whole family will love.


Ingredients

Chicken:

1 ½ pounds boneless skinless chicken breasts or thighs

Potatoes:

1 pound baby potatoes (halved)

Carrots:

2 cups baby carrots

Onion:

1 small yellow onion (sliced)

Seasonings:

3 cloves garlic (minced), 1 teaspoon dried thyme, 1 teaspoon dried rosemary, 1 teaspoon paprika, 1 teaspoon salt, ½ teaspoon black pepper

Others:

1 tablespoon olive oil, 1 cup low-sodium chicken broth, juice of ½ lemon, chopped fresh parsley for garnish (optional)


Instructions

  1. Prepare Ingredients: Place the chicken in the bottom of a 6-quart crockpot. Add the potatoes, carrots, and sliced onion on top.
  2. Season: Sprinkle garlic, thyme, rosemary, paprika, salt, and pepper evenly over the ingredients.
  3. Moisten: Drizzle with olive oil and pour the chicken broth and lemon juice over everything.
  4. Cook: Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is cooked through and the vegetables are tender.
  5. Adjust Seasoning: Taste and adjust seasoning if needed.
  6. Serve: Serve warm, garnished with fresh parsley if desired.

Notes

  • You can add green beans or chopped celery during the last hour of cooking for more variety.
  • This recipe also works well with boneless pork chops or turkey breast.
