Ingredients
Chicken:
1 ½ pounds boneless skinless chicken breasts or thighs
Potatoes:
1 pound baby potatoes (halved)
Carrots:
2 cups baby carrots
Onion:
1 small yellow onion (sliced)
Seasonings:
3 cloves garlic (minced), 1 teaspoon dried thyme, 1 teaspoon dried rosemary, 1 teaspoon paprika, 1 teaspoon salt, ½ teaspoon black pepper
Others:
1 tablespoon olive oil, 1 cup low-sodium chicken broth, juice of ½ lemon, chopped fresh parsley for garnish (optional)
Instructions
- Prepare Ingredients: Place the chicken in the bottom of a 6-quart crockpot. Add the potatoes, carrots, and sliced onion on top.
- Season: Sprinkle garlic, thyme, rosemary, paprika, salt, and pepper evenly over the ingredients.
- Moisten: Drizzle with olive oil and pour the chicken broth and lemon juice over everything.
- Cook: Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is cooked through and the vegetables are tender.
- Adjust Seasoning: Taste and adjust seasoning if needed.
- Serve: Serve warm, garnished with fresh parsley if desired.
Notes
- You can add green beans or chopped celery during the last hour of cooking for more variety.
- This recipe also works well with boneless pork chops or turkey breast.
