- 1 cup shredded cheddar cheese
For the Cornbread Topping:
- 1 box cornbread mix (8.5 oz)
- 1/3 cup milk
- 1 egg
- 2 tablespoons sour cream (optional)
For Garnish:
- Chopped green onions or cilantro
Instructions
- Preheat oven to 375°F: Lightly grease a 9×13-inch baking dish.
- Cook the Beef Mixture: Brown ground beef and onion in a skillet. Add taco seasoning, tomatoes, corn, and beans. Simmer to combine flavors.
- Layer the Casserole: Spread the beef mixture in the baking dish, top with shredded cheese.
- Prepare the Cornbread: Mix cornbread mix, milk, egg, and sour cream. Pour over the beef layer.
- Bake: Bake for 25–30 minutes until golden.
- Serve: Let sit for 5–10 minutes before garnishing with green onions or cilantro.
