- Prepare the dough: In a medium saucepan over medium heat, combine water, 2 tablespoons granulated sugar, salt, and unsalted butter. Bring this mixture to a boil, ensuring the butter fully melts.
- Make the dough: Reduce the heat to low and stir in the all-purpose flour all at once. Continue stirring vigorously until the dough forms a ball and pulls away cleanly from the sides of the pan. Remove from heat and allow the dough to cool for about 5 minutes.
- Incorporate egg and vanilla: Transfer the slightly cooled dough to a mixing bowl. Beat in the large egg and vanilla extract until the dough is smooth and fully combined, creating a pipeable consistency.
- Heat the oil: In a deep pan or heavy-bottomed pot, heat vegetable oil to 350°F (175°C). Use a thermometer to maintain consistent temperature for perfect frying.
