Chicken Mixture:
- 3 cups cooked shredded chicken
- 1 can refried beans (16 oz)
- 1 cup salsa
- 1 packet taco seasoning
- 1/2 cup sour cream
- 1 can corn (15 oz, drained)
- 1 can black beans (15 oz, drained and rinsed)
Additional Ingredients:
- 2 cups shredded Mexican blend cheese
- 6 large flour tortillas
- Chopped green onions and fresh cilantro for garnish
Instructions
- Preheat Oven: Preheat oven to 375°F and lightly grease a 9×13-inch baking dish.
- Prepare Chicken Mixture: In a large bowl, mix shredded chicken, refried beans, salsa, taco seasoning, sour cream, corn, and black beans until well combined.
- Layer Ingredients: Spread a layer of the chicken mixture in the baking dish. Tear tortillas into pieces and layer over the mixture, sprinkling cheese on top. Repeat layers, finishing with cheese.
- Bake: Cover with foil and bake for 20 minutes, then uncover and bake for an additional 10 minutes until bubbly and cheese is melted.
- Serve: Let rest for 5 minutes before serving. Garnish with green onions and cilantro.
Notes
- You can use rotisserie chicken for a shortcut.
- For extra spice, add jalapeños or hot sauce. To make it gluten-free, use corn tortillas.
