Wet Ingredients
- 1 1/2 cups unsweetened applesauce
- 1/2 cup coconut oil, melted (or vegetable oil)
- 3/4 cup brown sugar
- 1/4 cup honey or maple syrup
- 2 large eggs
- 1 1/2 teaspoons vanilla extract
Dry Ingredients
- 2 cups all-purpose flour or whole wheat flour
- 1 1/2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 teaspoon salt
Optional Add-ins
- 1/2 cup chopped walnuts or pecans
- 1/2 cup raisins
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper to prevent sticking.
- Mix Wet Ingredients: In a large mixing bowl, whisk together the unsweetened applesauce, melted coconut oil, brown sugar, honey or maple syrup, eggs, and vanilla extract until the mixture is smooth and well combined.
- Combine Dry Ingredients: In a separate bowl, sift together the flour, baking soda, baking powder, ground cinnamon, ground nutmeg, ground cloves, and salt to ensure even distribution of the leavening agents and spices.
- Incorporate Dry into Wet: Gradually add the dry ingredient mixture to the wet ingredients, gently stirring until just combined. Avoid overmixing to keep the cake tender.
- Add Optional Ingredients: Fold in the chopped nuts and raisins if using, distributing them evenly throughout the batter.
- Pour Batter and Bake: Pour the cake batter evenly into the prepared pan and smooth the top. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and Serve: Allow the cake to cool completely in the pan on a wire rack before slicing. Serve as desired and enjoy!
Notes
- For a healthier version, use whole wheat flour instead of all-purpose flour and consider reducing the sugar slightly.
- You can substitute additional applesauce for part of the oil to further lower the fat content of the cake.
- This cake tastes even better the next day as the flavors deepen and meld.
- Optional nuts and raisins add texture and additional flavor but can be omitted for allergies or preferences.
