Dorito meatloaf casserole is a flavorful, family-friendly spin on classic comfort food. Ground beef meatloaf is topped with a cheesy Rotel sauce, crunchy Doritos, and all your favorite Tex-Mex toppings for a bold and satisfying meal that’s easy to prepare and always a hit.

Ingredients

Scale

Meatloaf Mixture

  • 1 1/2 pounds ground beef
  • 1/2 cup crushed Nacho Cheese Doritos
  • 1/2 cup breadcrumbs
  • 1/3 cup milk
  • 1 large egg
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Cheesy Sauce

  • 1 (10-ounce) can Rotel (diced tomatoes with green chilies)
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese (divided)

Topping and Garnish

  • 1 cup crushed Doritos (for topping)
  • Chopped green onions (optional)
  • Jalapeños (optional)
  • Fresh cilantro (optional)

Instructions

  1. Preheat the Oven: Set your oven to 375°F (190°C) to get it ready for baking your casserole.
  2. Combine Meatloaf Ingredients: In a large bowl, thoroughly mix ground beef, 1/2 cup crushed Doritos, breadcrumbs, milk, egg, onion powder, garlic powder, chili powder, salt, and black pepper until everything is well incorporated.
  3. Form Meatloaf Layer: Press the meat mixture evenly into a greased 9×9 or 9×13-inch baking dish, creating a uniform meatloaf base layer.
  4. Prepare Cheesy Sauce: In a separate bowl, stir together the Rotel tomatoes with green chilies, sour cream, and half of the shredded cheddar cheese (1/2 cup) until combined.
  5. Layer Cheesy Sauce: Spread the cheesy sauce mixture evenly over the meatloaf layer in the baking dish.
  6. Add Cheese and Dorito Topping: Sprinkle the remaining 1/2 cup shredded cheddar cheese over the sauce, then top with 1 cup crushed Doritos for a crunchy finish.
  7. Bake the Casserole: Place the dish in the oven and bake uncovered for 30–35 minutes, or until the meat reaches an internal temperature of 160°F, indicating it is fully cooked.
  8. Rest and Garnish: Allow the casserole to rest for 5–10 minutes after baking. Garnish with chopped green onions, jalapeños, or fresh cilantro if desired before slicing and serving.

Notes

  • For a lighter version, substitute ground turkey instead of ground beef.
  • To increase heat, use spicy Doritos and add hot sauce to the meat mixture.
  • Serve this casserole with a side salad or roasted vegetables to balance the richness of the dish.
