- 1 large egg
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Cheesy Sauce
- 1 (10-ounce) can Rotel (diced tomatoes with green chilies)
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese (divided)
Topping and Garnish
- 1 cup crushed Doritos (for topping)
- Chopped green onions (optional)
- Jalapeños (optional)
- Fresh cilantro (optional)
Instructions
- Preheat the Oven: Set your oven to 375°F (190°C) to get it ready for baking your casserole.
- Combine Meatloaf Ingredients: In a large bowl, thoroughly mix ground beef, 1/2 cup crushed Doritos, breadcrumbs, milk, egg, onion powder, garlic powder, chili powder, salt, and black pepper until everything is well incorporated.
- Form Meatloaf Layer: Press the meat mixture evenly into a greased 9×9 or 9×13-inch baking dish, creating a uniform meatloaf base layer.
- Prepare Cheesy Sauce: In a separate bowl, stir together the Rotel tomatoes with green chilies, sour cream, and half of the shredded cheddar cheese (1/2 cup) until combined.
- Layer Cheesy Sauce: Spread the cheesy sauce mixture evenly over the meatloaf layer in the baking dish.
- Add Cheese and Dorito Topping: Sprinkle the remaining 1/2 cup shredded cheddar cheese over the sauce, then top with 1 cup crushed Doritos for a crunchy finish.
- Bake the Casserole: Place the dish in the oven and bake uncovered for 30–35 minutes, or until the meat reaches an internal temperature of 160°F, indicating it is fully cooked.
- Rest and Garnish: Allow the casserole to rest for 5–10 minutes after baking. Garnish with chopped green onions, jalapeños, or fresh cilantro if desired before slicing and serving.
Notes
- For a lighter version, substitute ground turkey instead of ground beef.
- To increase heat, use spicy Doritos and add hot sauce to the meat mixture.
- Serve this casserole with a side salad or roasted vegetables to balance the richness of the dish.
