Sauce

  • 2 tablespoons oyster sauce
  • 1 tablespoon soy sauce
  • 1/2 cup chicken stock (or vegetable stock)
  • 1/2 teaspoon rice vinegar
  • 1/2 teaspoon sugar
  • 1/8 teaspoon white pepper (or black pepper)

Vegetables and Aromatics

  • 8 oz snow peas (cleaned and strings removed)
  • 2 inches ginger (julienned)
  • 1/4 cup frozen peas (Optional)

Cooking Oil

  • 1 1/2 tablespoons peanut oil


Instructions

  1. Marinate the Shrimp: In a medium-size bowl, combine the shrimp with Shaoxing wine, salt, and cornstarch. Use your hands to mix well, ensuring every shrimp is coated evenly. Set the mixture aside to marinate while you prepare the sauce.
  2. Prepare the Sauce: In a small bowl, mix together oyster sauce, soy sauce, chicken stock, rice vinegar, sugar, and white pepper. Stir thoroughly until all ingredients are combined and the cornstarch has dissolved completely.
  3. Cook the Shrimp: Heat 1 tablespoon of peanut oil in a large skillet over medium-high heat. Add the shrimp in a single layer and cook undisturbed for about 1 minute. Flip the shrimp and continue to stir-fry until the shrimp turn opaque and are cooked through, about 1 to 2 minutes total. Transfer the shrimp to a plate to keep warm.
  4. Sauté Ginger: Add the remaining 1/2 tablespoon of oil to the skillet, then add the julienned ginger. Stir-fry briefly until the ginger releases its fragrance and becomes aromatic.
  5. Cook Snow Peas: Spread the snow peas evenly in the skillet in a single layer. Cook for 30 seconds without stirring, then flip them over and cook for another 30 seconds until they begin to soften but remain crisp.
  6. Combine and Finish: Return the cooked shrimp to the skillet. Give the prepared sauce another stir, then pour it over the shrimp and snow peas. If using, add the frozen peas now. Stir everything together and cook until the sauce thickens and coats the ingredients, about 1 to 2 minutes.
  7. Serve: Transfer the shrimp and snow peas to a serving plate and serve hot, ideally over steamed rice for a complete meal.

  • If you prefer a vegetarian version, omit the shrimp and use tofu or extra vegetables along with vegetable stock instead of chicken stock.
