Turkey:

  • 1 whole turkey (1214 pounds), thawed if frozen, neck and giblets removed

Seasoned Butter:

  • 1/2 cup unsalted butter, softened
  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 2 teaspoons black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • 1 teaspoon paprika

Stuffing:

  • 1 lemon, quartered
  • 1 onion, quartered
  • 1 head garlic, halved
  • 4 sprigs fresh rosemary
  • 4 sprigs fresh thyme

Additional:

  • 2 cups low-sodium chicken broth

Instructions

  1. Preheat Oven: Preheat oven to 325°F (165°C).
  2. Prepare Turkey: Pat turkey dry, place on rack in roasting pan.
  3. Make Seasoned Butter: Mix butter, olive oil, salt, pepper, garlic powder, onion powder, thyme, rosemary, and paprika.
  4. Season Turkey: Rub half of butter mixture under turkey skin and the rest over the outside.
  5. Stuff Turkey: Fill cavity with lemon, onion, garlic, and herbs. Tie legs and tuck wings.
  6. Roast: Pour broth in pan, roast turkey for 3-3.5 hours, basting every 45 minutes.
  7. Rest and Serve: Let turkey rest for 30 minutes before carving.
