  • 1 (30 oz) bag frozen shredded hash browns, thawed
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup cooked breakfast sausage or bacon, crumbled
  • 8 large eggs
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme (optional)
  • 1 1/2 cups shredded cheddar cheese
  • nonstick cooking spray

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with nonstick spray.
  2. Sauté vegetables and meat: In a large skillet over medium heat, sauté the onion and bell peppers until softened. Add the cooked sausage or bacon, stir to combine, then remove from heat.
  3. Prepare egg mixture: In a large bowl, whisk together eggs, milk, salt, pepper, garlic powder, and thyme. Add hash browns, sautéed vegetables and meat, and 1 cup of cheese. Mix well.
  4. Assemble and bake: Pour mixture into the baking dish, top with remaining cheese, and bake uncovered for 45–50 minutes until set and golden brown. Let cool before serving.
