Filling:
- 1 (30 oz) bag frozen shredded hash browns, thawed
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 cup cooked breakfast sausage or bacon, crumbled
- 8 large eggs
- 1 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried thyme (optional)
- 1 1/2 cups shredded cheddar cheese
- nonstick cooking spray
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with nonstick spray.
- Sauté vegetables and meat: In a large skillet over medium heat, sauté the onion and bell peppers until softened. Add the cooked sausage or bacon, stir to combine, then remove from heat.
- Prepare egg mixture: In a large bowl, whisk together eggs, milk, salt, pepper, garlic powder, and thyme. Add hash browns, sautéed vegetables and meat, and 1 cup of cheese. Mix well.
- Assemble and bake: Pour mixture into the baking dish, top with remaining cheese, and bake uncovered for 45–50 minutes until set and golden brown. Let cool before serving.
Notes
- This casserole can be assembled the night before and baked in the morning.
- You can customize with mushrooms, spinach, or different cheeses.
