- 1/4 teaspoon black pepper
- 1/4 cup all-purpose flour
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- 1/2 cup whole milk
- 1 tablespoon soy sauce or tamari
- Chopped fresh parsley, for garnish
Instructions
- Sauté Aromatics: In a large soup pot, heat butter and olive oil. Sauté onion until translucent, then add garlic.
- Cook Mushrooms: Add mushrooms, thyme, salt, and pepper. Cook until browned.
- Add Flour: Sprinkle in flour, stir well, and cook briefly.
- Pour Broth: Gradually add broth, stirring to avoid lumps. Simmer.
- Finish Soup: Stir in cream, milk, and soy sauce. Simmer until thickened. Adjust seasoning
- Serve: Garnish with parsley and serve hot.
Notes
- For a smoother texture, blend part or all of the soup before adding cream.
- You can also add a splash of white wine while sautéing the mushrooms for added depth.
