Cake Layers:

  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened dark cocoa powder
  • 2 cups granulated sugar

  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil

Dark Chocolate Ganache:

  • 8 oz dark chocolate, chopped
  • 1 cup heavy cream
  • Berry Filling:

    • 1 cup mixed fresh or frozen berries (raspberries, blackberries, or cherries)
    • 2 tablespoons sugar
    • 1 teaspoon lemon juice
    • Optional Garnish:

      • Fresh berries
      • Edible rose petals
      • Gold leaf

Instructions

  1. Preheat the oven to 350°F and grease two 8-inch round cake pans. Line the bottoms with parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add eggs, buttermilk, oil, and vanilla. Beat until smooth.
  4. Pour in the hot coffee and mix until fully combined. The batter will be thin.
  5. Divide evenly between pans and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let cakes cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
  7. Make the berry filling: Cook berries, sugar, and lemon juice until slightly thickened. Let cool.
  8. Prepare the ganache: Heat cream, pour over chocolate, and stir until smooth. Let cool.
  9. Assemble the cake by layering with ganache and berry filling. Top with second cake round and pour remaining ganache over the top.
  10. Decorate with fresh berries, edible flowers, or gold leaf.

Notes

  • For a deeper chocolate flavor, use espresso instead of coffee.
  • You can refrigerate the cake before serving to help the ganache set more firmly. Let sit at room temp for 30 minutes before slicing.
