- 1 cup buttermilk

- 1 cup hot brewed coffee
Dark Chocolate Ganache:
- 8 oz dark chocolate, chopped
- 1 cup heavy cream
- 1 cup mixed fresh or frozen berries (raspberries, blackberries, or cherries)
- 2 tablespoons sugar
- 1 teaspoon lemon juice
- Fresh berries
- Edible rose petals
- Gold leaf

Instructions
- Preheat the oven to 350°F and grease two 8-inch round cake pans. Line the bottoms with parchment paper.
- In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Add eggs, buttermilk, oil, and vanilla. Beat until smooth.
- Pour in the hot coffee and mix until fully combined. The batter will be thin.
- Divide evenly between pans and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Let cakes cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
- Make the berry filling: Cook berries, sugar, and lemon juice until slightly thickened. Let cool.
- Prepare the ganache: Heat cream, pour over chocolate, and stir until smooth. Let cool.
- Assemble the cake by layering with ganache and berry filling. Top with second cake round and pour remaining ganache over the top.
- Decorate with fresh berries, edible flowers, or gold leaf.
Notes
- For a deeper chocolate flavor, use espresso instead of coffee.
- You can refrigerate the cake before serving to help the ganache set more firmly. Let sit at room temp for 30 minutes before slicing.
