  • 2 cups dandelion flower heads (just the yellow petals, no green parts)
  • 2 cups water
  • 1 lemon, sliced
  • 1 ½ cups granulated sugar


Instructions

  1. Rinse the Petals: Thoroughly rinse the dandelion petals to remove any dirt or bugs, ensuring a clean base for the syrup.
  2. Simmer the Flowers and Lemon: In a medium saucepan, combine dandelion petals, water, and lemon slices. Bring to a boil, then reduce heat and let it simmer gently for 20–30 minutes to extract flavors.
  3. Steep the Mixture: Remove from heat, cover, and allow the mixture to steep for at least 4 hours or overnight to deepen the floral taste.
  4. Strain the Liquid: Strain the mixture through a fine mesh sieve or cheesecloth, pressing to extract all the liquid and discard solids.
  5. Add Sugar and Simmer: Return the strained liquid to the saucepan, add the granulated sugar, bring to a boil over medium heat, then simmer gently for 45–60 minutes, stirring occasionally until it thickens to a honey-like consistency.
  6. Cool and Store: Pour the syrup into sterilized jars and let it cool completely before sealing for storage.

  • Only use dandelions harvested from areas free of pesticides or herbicides to ensure safety.
  • For a thicker syrup, simmer the mixture for a longer period until desired consistency is reached.
