Spiced Chickpeas
- 1 (15 oz) can chickpeas, drained and rinsed
- 2 teaspoons olive oil
- 3/4 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon smoked paprika (optional)
- 1/2 teaspoon salt
Caesar Salad Mix
- 3–4 cups chopped romaine lettuce (1 large head or 2 smaller heads)
- 1/2 cup Caesar dressing
- 1/2 cup freshly shredded or shaved parmesan cheese
- 1 cup croutons
Wrap Assembly
- 1 ripe avocado, mashed with a fork (optional)
- 2–3 large wraps
Instructions
- Prepare Spiced Chickpeas: Rinse and drain the chickpeas thoroughly, then pat them dry with a paper towel. Heat 2 teaspoons of olive oil in a skillet over medium heat. Add the chickpeas along with paprika, garlic powder, onion powder, smoked paprika (if using), and salt. Cook, stirring occasionally, until chickpeas become crispy and browned, about 5 minutes.
- Make Caesar Salad Mix: In a large bowl, toss the chopped romaine lettuce with Caesar dressing until evenly coated. Add the shredded or shaved parmesan cheese and croutons, and mix gently to combine all ingredients well.
- Assemble Wraps: Lay out each wrap on a flat surface. Optionally spread the mashed avocado evenly over the wrap. Top with a generous amount of the spiced chickpeas, followed by the Caesar salad mixture. Roll the wrap tightly from one end to the other. For a warm, sealed wrap, optionally heat a pan over medium heat and press the rolled wrap for 1-2 minutes on each side to seal and warm through. Cut each wrap in half and serve immediately.
