			Main Ingredients
- 1.5 lbs boneless, skinless chicken breasts or thighs
- 1 onion, sliced
- 2 bell peppers (any color), sliced
- 1 packet fajita seasoning mix (or homemade seasoning)
- 1 can (14 oz) diced tomatoes, drained
- 1/4 cup chicken broth (or water)
- 1 tbsp olive oil (optional)
- Salt and pepper, to taste
For Serving
- 1-2 tbsp fresh lime juice
- Tortillas
- Fresh cilantro, for garnish (optional)
Instructions
- Prepare the chicken and vegetables: Place the boneless, skinless chicken breasts or thighs at the bottom of the crockpot. Layer the sliced onion and bell peppers over the chicken evenly.
- Add seasoning and liquids: Sprinkle the fajita seasoning mix over the chicken and vegetables. Pour the drained diced tomatoes and chicken broth (or water) over the top. Drizzle olive oil if using, and season with salt and pepper according to your taste.
- Cook the fajitas: Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and tender enough to shred easily.
- Shred the chicken: Remove the chicken from the crockpot and shred it using two forks, breaking it into bite-sized pieces.
- Combine and season: Return the shredded chicken to the crockpot and stir it into the vegetables and sauce. Add fresh lime juice to taste and mix well to combine all the flavors.
- Serve: Warm the tortillas. Serve the chicken fajita mixture in the tortillas, garnished with fresh cilantro if desired. Enjoy your flavorful homemade chicken fajitas!
Notes
- You can substitute chicken thighs for breasts to get juicier, more flavorful fajitas.
- If you prefer spicier fajitas, add extra fajita seasoning or a pinch of cayenne pepper.
- Homemade fajita seasoning is a great alternative to the packet; it usually includes chili powder, paprika, cumin, garlic powder, onion powder, and oregano.
- Draining the diced tomatoes helps prevent excess liquid, ensuring the fajitas are not too watery.
- If you don’t have a crockpot, you can cook the mixture in a covered skillet on low heat for about 45 minutes to 1 hour, stirring occasionally.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days.
