Instructions
- Prep and layer: Spray the inside of a 6-quart crock pot with nonstick cooking spray to prevent sticking. Place the chicken breasts in a single layer at the bottom of the crock pot. In a small bowl, whisk together the kosher salt, black pepper, garlic powder, and dried Italian seasoning, then sprinkle this seasoning evenly over the chicken breasts. Next, layer the drained green beans over the chicken, followed by a layer of the chicken stuffing mix.
- Make sauce: In a separate bowl, combine the low-sodium cream of chicken soup, 1 cup of the low sodium chicken broth, sour cream, and melted butter. Stir until smooth, then carefully pour this sauce mixture evenly over the stuffing layer. Do not stir after pouring to maintain layers for cooking.
- Cook: Cover the crock pot with its lid. Cook on high for 4 to 5 hours, or on low for 6 to 7 hours, until the chicken breasts are fully cooked through and reach an internal temperature of 165 degrees Fahrenheit.
- Fluff and serve: Once cooked, gently stir the stuffing layer with a fork to fluff it up. If the stuffing appears dry, add the remaining 1/4 cup of chicken broth and mix in gently. Serve the chicken, stuffing, and green beans hot for a delicious, hearty meal.
